中文摘要: 叶酸在细胞增殖、DNA合成及人体健康维护中扮演着关键角色。叶酸缺乏与新生儿神经管畸形、巨幼红细胞性贫血及多种恶性肿瘤的发生密切相关。叶酸不稳定,在食品加工过程中损失率较高,采用发酵、微胶囊包埋、基因工程等叶酸强化方法可显著提升食品或饲料中的叶酸含量,确保叶酸的稳定性和可利用性。该文对叶酸强化工艺的技术路径、在食品工业中的应用与发展方向进行综述展望,为相关产业的技术升级与高品质营养食品开发提供参考。
Abstract:Folic acid plays a crucial role in cell proliferation,DNA synthesis,and the maintenance of human health.A deficiency in folic acid is closely associated with neural tube defects in newborns,megaloblastic anemia,and the occurrence of various malignant tumors.However,due to the instability of folic acid,its loss rate is relatively high during food processing.Through folic acid fortification techniques such as fermentation,microencapsulation,and genetic engineering,the folic acid content in food or feed can be significantly increased,ensuring its stability and bioavailability.This article provides a comprehensive review of the technical path of folic acid fortification,its application in food industry and its development direction offering references for technological upgrades in related industries and the development of high-quality nutritional foods.
