中文摘要: 面制品作为我国传统主食,但其营养结构相对简单,需要进一步优化。薯类全粉富含膳食纤维、抗性淀粉和多酚等功能成分,可有效改善面制品的营养与功能特性。该文系统综述薯类全粉对复合面团流变特性和产品品质的影响机制,重点探讨复配改良与改性技术在提升其加工适应性方面的应用,并分析其在改善消化特性、降低血糖生成指数等方面的营养功能潜力。最后针对产业化进程中面临的关键挑战,提出未来研究方向,以期为推动薯类全粉在高品质面制品中的创新应用与产业升级提供参考。
Abstract:As a traditional staple food in China,flour products face the challenge of having a monotonous nutritional structure,which needs further optimization.Tuber flour,rich in functional components such as dietary fiber,resistant starch,and polyphenols,can effectively improve the nutritional and functional properties of flour products.This review systematically summarized the mechanisms by which tuber flour influenced the rheological properties of composite dough and product quality,with a focus on the application of compound improvement and modification technologies to enhance processing adaptability.The potential nutritional functions,including improving digestive characteristics and reducing glycemic index,were also analyzed.Finally,in light of key industrialization challenges,future research directions were proposed to promote the innovative application and industrial upgrading of tuber flour in high-quality flour products.
