中文摘要: 藜麦作为苋科藜亚科双子叶草本植物,已有三千余年的种植历史,具有耐旱、耐低温、耐盐碱等特性。藜麦中营养物质丰富,如蛋白质、氨基酸、酚类化合物、微量营养元素和膳食纤维等,在食品市场具有重要应用价值。藜麦还具有预防血栓、动脉粥样硬化、免疫、抗炎等药理活性,在功能性食品方面也有一定研究。该文从藜麦的品质成分、影响因素及在食品等领域的应用展开系统梳理,分析预测未来的研究方向和应用前景,探讨其在现代食品产业中的发展潜力。
Abstract:Quinoa,a dicotyledonous herbaceous plant of Chenopodioideae of Amaranthaceae,has a planting history of more than 3 000 years,with drought tolerance,low temperature tolerance,and salt-alkali tolerance.Quinoa is rich in nutrients such as proteins,amino acids,phenols,trace nutrients,and dietary fiber,demonstrating important application value in the food market.In addition,quinoa has pharmacological activities such as prevention of thrombosis and atherosclerosis,immune modulation,and anti-inflammatory effect.Its application in functional foods has been studied.The research progress in quinoa was systematically reviewed in terms of the quality components,influencing factors,and applications in various fields such as food.The future research directions and application prospects were analyzed and predicted,and the development potential of quinoa in the modern food industry was discussed.
