中文摘要: 枸杞是茄科枸杞属多年生木本植物,具有提高免疫能力、抗氧化、维持血糖、预防肿瘤、延缓衰老等诸多药理功效,是“药食同源”的典型代表。我国作为全球最大的枸杞生产和消费国,枸杞产业在推进乡村全面振兴、提高农业经济等方面发挥着重要作用。目前,枸杞加工转化率低,市场上80%的枸杞是以干果的形式加工销售,存在活性成分损失、产品附加值低等问题。该文综述枸杞果实深加工技术发展现状与趋势,重点探讨不同加工方法对枸杞活性物质(如枸杞多糖、类胡萝卜素、多酚类化合物等)的影响,分析枸杞鲜果保鲜、干燥、活性成分等提取加工等技术,并对枸杞发酵制品及副产品利用进行综述,旨在为枸杞产业持续健康发展提供参考。
Abstract:Wolfberries,the fruits of Lycium barbarum,have diverse pharmacological effects such as enhancing immunity,antioxidation,maintaining blood glucose,preventing tumors and delaying aging,being a medicinal material with edible value.China leads in wolfberry production and consumption,with the wolfberry industry playing a key role in promoting comprehensive rural revitalization,and improving the agricultural economy.However,this industry faces low processing efficiency,with 80% wolfberries sold as dried fruits,which suffer from active component loss and low added value.This review examined the current status and development trend of wolfberry processing,focusing on how different processing methods affect key active components such as polysaccharides,carotenoids,and polyphenols.Furthermore,it explored the preservation,drying,and active component extraction techniques,as well as the utilization of fermentation products and by-products,aiming to provide references for sustainable growth of the industry.
