中文摘要: 萜类物质生理活性显著,但其水溶性和化学稳定性较差,限制了其生物利用度。该文综述了食品基质与加工方式对该类物质生物利用度的影响及机制:在基质效应方面,解析了脂质的促吸收作用及膳食纤维、蛋白质与矿物质等成分的截留干扰机制;在加工方面,探讨了热处理、机械处理及发酵等手段通过破壁或转化调控成分释放的规律。该文旨在为开发高效能功能食品提供理论依据。
Abstract:Although terpenoids exhibit remarkable physiological activities,their bioavailability is severely limited by their poor water solubility and chemical stability.This review summarized the effects and underlying mechanisms of food matrices and processing technologies on the bioavailability of these compounds.Regarding matrix effects,it analyzed the promoting effect of lipids on absorption,as well as the entrapment and interference mechanisms involving components such as dietary fibers,proteins,and minerals.In terms of processing,this review explored how thermal treatment,mechanical processing,and fermentation regulate the release of these compounds through cell wall disruption or structural transformation.This review aims to provide a theoretical basis for the development of high-efficacy functional foods.
