中文摘要: 木棉花具有营养和食疗价值,且木棉花中含有丰富的膳食纤维。该试验利用酶法对木棉花中的可溶性膳食纤维进行提取,并采用单因素试验及响应面试验对提取工艺进行优化。以酶解时间、料液比、加酶量、酶解温度为考察因素,选取影响较大的3个因素开展响应面优化试验。结果表明,酶法提取木棉花中可溶性膳食纤维的最优工艺条件为酶解时间75 min、料液比1∶40 (g∕mL)、加酶量0.38%、酶解温度86 ℃,该工艺下,木棉花可溶性膳食纤维提取率为15.788%。
Abstract:Kapok flower possesses both nutritional and dietary therapeutic value,and it is rich in dietary fiber.In this study,the soluble dietary fiber was extracted from kapok flower by using an enzymatic method.The extraction process was optimized through single-factor experiments and response surface experiments.The enzymatic hydrolysis time,solid-to-liquid ratio,enzyme dosage,and enzymatic hydrolysis temperature were selected as investigated factors.Among these,the three most influential factors were selected for response surface optimization experiments.The results showed that the optimal process conditions for extracting soluble dietary fiber from kapok flower were as follows: enzymatic hydrolysis time of 75 min,solid-to-liquid ratio of 1∶40 (g∕mL),enzyme dosage of 0.38%,and enzymatic hydrolysis temperature of 86 ℃.Under the process,the extraction yield of soluble dietary fiber from kapok flower reached 15.788%.
