中文摘要: 该研究以从广西壮族自治区崇左市扶绥县传统酸粥中分离鉴定的副干酪乳杆菌GX0002948作为发酵菌株,以大米为原料,以pH值为核心考察指标,在单因素试验的基础上通过Plackett-Burman和响应面法优化其发酵酸粥工艺。副干酪乳杆菌GX0002948最佳发酵条件为菌悬液体积分数12.5%、葡萄糖质量分数5%、大米灭菌时间7 min、发酵温度37 ℃、发酵时间90 h。在此优化条件下,发酵酸粥pH值为2.70±0.03,可滴定酸度为(8.77±0.15)°T,相较于自然发酵酸粥pH值降低了2.24,可滴定酸度增加了7.44 °T。
Abstract:Lacticaseibacillus paracasei subsp.tolerans GX0002948 isolated and identified from traditional sour porridge in Fusui County,Chongzuo City,Guangxi Zhuang Autonomous Region was used for fermentation of rice.With pH value as the core indicator,the fermentation process of sour porridge was optimized by Plackett-Burman design and response surface methodology on the basis of single-factor experiments.The optimal fermentation conditions of L.paracasei subsp.tolerans GX0002948 were determined as follows: inoculum size of 12.5%,glucose content of 5%,rice sterilization time of 7 min,fermentation temperature of 37 ℃,and fermentation time of 90 h.Under these optimized conditions,fermented sour porridge reached pH 2.70±0.03 and the titratable acidity of (8.77±0.15) °T,which represented a decrease of 2.24 and an increase of 7.44 °T compared with naturally fermented sour porridge.
