中文摘要: 为解决羊奶粉膻味问题并提升其中老年人群适用性,该研究针对复合配方羊奶粉(YNF-D)的感官特性及关键原料粉体性能展开系统性分析。通过激光粒度分析、粉体流变学表征、冲调特性评价及电子感官联用技术,分析YNF-D中的关键原料的粉体特性,并评估YNF-D与3款市售复合配方羊奶粉产品的综合感官特性。结果表明,关键原料粒径分布差异显著(20.2~641.3 μm),脱脂乳粉因粒径跨度大易影响混合均匀性,需预混合处理;流动性指数显示,乳清蛋白粉Hilmar 8350、乳清蛋白粉Hilmar 7500、羊奶粉流动性指数分别为49.5、56.5、59.0,流动性评价结果均为“中等”,建议采用分级预混策略优化。感官评价结果显示,YNF-D在组织状态、冲调性及口感方面均优于市售产品,电子鼻与电子舌分析进一步证实其风味与市售高接受度产品接近,且多元原料组合显著提升了味觉浓郁度。基于分级混合工艺制备的YNF-D蛋白质含量为21.8 g∕100 g、膳食纤维含量为9.33 g∕100 g。本研究为功能性羊奶粉的感官调控与工艺优化以及功能性乳粉的工业化生产提供了科学依据。
Abstract:A systematic analysis was conducted on the sensory characteristics and powder properties of key raw materials of a compound formula goat milk powder (YNF-D).The aim was to address the muttony flavor issue of goat milk powder and enhance its suitability for the middle-aged and elderly population.The powder properties of key raw material in YNF-D were analyzed using laser particle size analysis,powder rheology characterization,reconstitution property evaluation,and combined electronic sensory technology.Comprehensive sensory characteristics of YNF-D and three commercially available compound formula goat milk products were evaluated.The results indicated that the particle size distributions of key raw material varied significantly(20.2-641.3 μm).Skim milk powder was found to easily affect the uniformity of the mixture due to its large particle size span,necessitating pre-mixing treatment.Flowability indices of whey protein powder Hilmar 8350,whey protein powder Hilmar 7500,and goat milk powder were 49.5,56.5,and 59.0,respectively.The flowability evaluation results were categorized as “moderate”,and a graded pre-mixing strategy was suggested for optimization.Sensory evaluation results showed that YNF-D was superior to commercially available products in terms of texture,reconstitution properties,and taste.Analysis using an electronic nose and electronic tongue further confirmed that the flavor of YNF-D was close to that of products with high commercial acceptance.Furthermore,the combination of multiple raw materials significantly enhanced taste richness.The protein content and dietary fiber content of YNF-D prepared by the graded mixing process were 21.8 g∕100 g and 9.33 g∕100 g,respectively.This study provided a scientific basis for the sensory regulation and process optimization of functional goat milk powder,as well as for the industrial production of functional milk powder.
