中文摘要: 为改善用于婴儿配方奶粉的乳蛋白基料的品质特性,以膜分离乳蛋白为研究对象,探究不同超声功率、超声时间对乳蛋白特性的影响,并通过光谱学进行验证。结果表明:超声改性可以提高乳蛋白的乳化性、表面疏水性并降低粒径、电位以及黏度,且在超声功率300 W时变化最显著,而600 W时会导致蛋白重新聚集。将乳蛋白在超声功率300 W处理后进行喷雾干燥,并检测干燥后粉末的溶解性,结果表明超声处理显著提高乳蛋白的溶解性。通过光谱学分析发现,超声作用下乳蛋白的结构发生变化。综上,超声改性后的乳蛋白的乳化性、溶解性、表面疏水性均有所增加,乳蛋白粒径、电位、黏度均有所降低,且乳蛋白的结构发生了改变。
Abstract:To improve the quality characteristic of milk protein substrates used in infant formula,membraneseparated milk protein was selected as the research object to investigate the effects of different ultrasonic power and treatment time on milk protein characteristics,which were further verified by spectroscopic analysis.The results demonstrated that ultrasonic modification could enhance the emulsifying properties and surface hydrophobicity of milk protein while reducing particle size,zeta potential,and viscosity.The most significant changes were observed at an ultrasonic power of 300 W,whereas treatment at 600 W led to protein re-aggregation.Milk protein treated with ultrasound at 300 W was subsequently spray-dried,and the solubility of the dried powder was determined.The results showed that ultrasonic treatment significantly improved the solubility of milk protein.Spectroscopic analysis further revealed that the structure of milk protein changed under ultrasonic treatment.In summary,ultrasonic modification increased the emulsifying properties,solubility,and surface hydrophobicity of milk protein,while decreasing particle size,zeta potential,and viscosity,and also altered the structure of milk protein.
