中文摘要: 为探究不同浓度γ-氨基丁酸(γ-aminobutyric acid,GABA)处理对采后草莓果实抗氧化活性及花色苷积累的影响,在(4.0±0.5) ℃贮藏条件下,使用0、1、5、10 mmol∕L GABA处理章姬草莓果实。结果表明,5 mmol∕L GABA能显著延缓草莓果实成熟,提高色泽角度、硬度和可滴定酸含量,降低可溶性固形物含量。同时提高总抗氧化能力和抗坏血酸含量,降低丙二醛含量。过氧化物酶、过氧化氢酶、超氧化物歧化酶和抗坏血酸过氧化物酶的活性增加,而多酚氧化酶的活性降低,抗氧化能力显著提高。5 mmol∕L GABA处理样本总花色苷含量显著降低,苯丙氨酸解氨酶、肉桂酸4-羟化酶、查尔酮合酶、黄酮3'-羟化酶及花青素合成酶活性降低。综上,GABA处理可以提高草莓果实抗氧化能力,延缓花色苷积累,进而延缓果实成熟。
Abstract:To investigate the effects of different concentrations of γ-aminobutyric acid (GABA) on antioxidant activity and anthocyanin accumulation in postharvest strawberry fruits,Akihime strawberries were treated with 0,1,5,10 mmol∕L GABA and stored at (4.0±0.5) ℃.The results showed that 5 mmol∕L GABA treatment significantly delayed strawberry ripening,increased hue angle,firmness,and titratable acid content,and decreased soluble solids content.Meanwhile,total antioxidant activity and ascorbic acid content were increased,while malondialdehyde content was decreased.The activities of peroxidase,catalase,superoxide dismutase,and ascorbate peroxidase increased,while that of polyphenol oxidase decreased,significantly improving antioxidant capacity.The 5 mmol∕L GABA treatment significantly reduced total anthocyanin content.The activities of phenylalanine ammonia lyase,cinnamate 4-hydroxylase,chalcone synthase,flavonoid 3'-hydroxylase,and anthocyanin synthase were decreased.In conclusion,GABA treatment can enhance the antioxidant capacity of strawberry fruits,delay anthocyanin accumulation,and thereby delay fruit ripening.
