中文摘要: 类黑精是糖类与氨基酸经过美拉德反应中一系列复杂的化学反应生成的高分子聚合物,具有抗氧化、抗菌、改善肠道菌群、降血压、抗肿瘤及预防肥胖等多种生物活性,近年来受到广泛关注。该文对类黑精的提取方法、分离纯化方法、功能活性及其相关应用进行综述,以期为类黑精的进一步研究与应用提供参考。

Abstract:Melanoidins are high molecular weight polymers produced by a series of complex chemical reactions between sugars and amino acids in the Maillard reaction. They possess various biological activities,such as antioxidant,antibacterial,hypotensive,anti-tumor,and anti-obesity effects,as well as improvement of intestinal flora,which have attracted much attention in recent years. In this paper,the extraction methods,separation and purification methods,functional activities,and related applications of melanoidins were reviewed to provide a reference for their further research and application.
