中文摘要: 乳清蛋白营养价值高,但易受加工环境因素的影响,导致功能降低等问题。多糖参与的美拉德反应可改善乳清蛋白的结构与功能特性,该反应产生的还原酮中间体、杂环化合物和黑色素等,具有一定的抗氧化、抗菌等生物活性。但美拉德反应所产生的杂环胺和丙烯酰胺等中晚期产物也可能会对偶联物的安全性产生负面影响,如增强细胞毒性、诱发慢性疾病等。因此,亟需对美拉德反应的进程与反应程度进行有效调控。该文主要阐述多糖协同的美拉德反应对乳清蛋白的修饰作用,分析该反应对乳清蛋白结构、功能特性及生物活性的影响,并探讨蛋白质-多糖偶联物在食品产业化应用中的现状与发展前景。
Abstract:Whey protein has high nutritional value,but it is susceptible to processing environmental factors,leading to problems such as reduced functionality. The Maillard reaction involving polysaccharides can improve the structural and functional properties of whey protein. The intermediate reductones,heterocyclic compounds,and melanoidins generated in this reaction possess certain biological activities,such as antioxidant and antimicrobial effects. However,intermediate and late-stage Maillard reaction products,such as heterocyclic amines and acrylamide,may negatively impact the safety of the conjugates,potentially enhancing cytotoxicity or inducing chronic diseases. Therefore,there is an urgent need for effective regulation of the progress and extent of the Maillard reaction. This review primarily elaborated on the modifying effects of Maillard reaction involving polysaccharides on whey protein,analyzed its influence on protein structure,functional properties,and biological activities,and discussed the current status and future prospects of protein and polysaccharide conjugates in food industrialization applications.
