中文摘要: 黑小麦是通过小麦与黑麦远缘杂交培育的新型功能性谷物,其不仅富含蛋白质、膳食纤维、维生素、矿物质等营养成分,还含有花色苷、酚酸、黄酮类化合物等植物次生代谢物,具有抗氧化、调节血糖、抗癌和抑菌等生物活性。该文综述近五年来国内外关于黑小麦的营养物质、活性成分及生物活性研究,总结黑小麦在传统主食类食品、休闲食品、发酵食品、固体饮料等营养食品中的应用和研究进展,以期为黑小麦的高值化利用和产品研发提供参考。
Abstract:Black wheat is a functional cereal cultivated through distant hybridization of wheat and rye. It is not only rich in nutritional components such as proteins,dietary fiber,vitamins,and minerals,but also contains plant secondary metabolites including anthocyanins,phenolic acids,and flavonoids,exhibiting bioactivities such as antioxidant,blood glucose regulation,anti-cancer and antimicrobial effects. This paper reviewed the studies on nutrients,active components,and bioactivities of black wheat in the past five years worldwide,further summarized its application and research progress in the development of nutritional foods,including traditional staple foods,snack foods,fermented foods,and solid beverages,aiming to provide references for the high-value utilization and product development of black wheat.
