中文摘要: 为系统评估不同品种食用菌氨基酸总体品质的差异规律,以7种食用菌为研究对象,通过全自动氨基酸分析仪检测其氨基酸含量和种类,采用味觉活性值(taste-activity value,TAV)、相关性分析(correlation analysis,CA)法、主成分分析(principal component analysis,PCA)法、聚类分析(hierarchical cluster analysis,HCA)法对食用菌氨基酸进行综合评价。结果表明,各食用菌总游离氨基酸(total free amino acid,TFAA)含量为9.68~21.53 mg/g,其中香菇的TFAA含量最高,海鲜菇TFAA含量最低,各品种氨基酸变异系数为16.84%~56.28%。7种食用菌中呈味氨基酸含量依次为芳香族氨基酸>鲜味氨基酸>苦味氨基酸>甜味氨基酸,其中,赖氨酸和丙氨酸的TAV均大于1,对鲜味贡献较大。不同品种食用菌相关性较好,缬氨酸与苯丙氨酸、蛋氨酸等呈极显著正相关,苏氨酸与脯氨酸、谷氨酸呈极显著负相关。主成分分析共提取3个主成分,累计方差贡献率为84.844%,综合评价显示白蘑菇氨基酸含量相对占优势。聚类分析与主成分分析结果一致,7种食用菌分为3类,第1类是香菇,第2类是白蘑菇、蟹味菇和杏鲍菇,第3类是鹿茸菇、海鲜菇和金针菇。
Abstract:To systematically evaluate the variation patterns in the overall amino acid quality among different varieties of edible fungi,seven varieties of edible fungi were selected as research subjects. The content and types of their amino acids were determined using a fully automated amino acid analyzer. A comprehensive evaluation of the amino acids in the edible fungi was conducted by applying the taste-activity value (TAV),correlation analysis (CA),principal component analysis (PCA),and hierarchical cluster analysis (HCA)methods. The results showed that the total free amino acid (TFAA) content across the edible fungi ranged from 9.68-21.53 mg/g. Among them,shiitake mushrooms had the highest TFAA content,while seafood mushrooms had the lowest TFAA content. The coefficient of variation for amino acids among the varieties ranged from 16.84%-56.28%. In the seven edible fungi,the content levels of flavor-contributing amino acids ranked as follows: aromatic amino acids > umami amino acids > bitter amino acids > sweet amino acids. Notably,the TAVs of lysine and alanine were both greater than 1,indicating significant contributions to umami. Different varieties of edible fungi exhibited strong correlations: Valine showed a highly significant positive correlation with phenylalanine and methionine,while threonine showed a highly significant negative correlation with proline and glutamic acid. PCA extracted three principal components,with a cumulative variance contribution rate of 84.844%. The comprehensive evaluation indicated that white mushrooms held a relative advantage in amino acid content. The results of hierarchical cluster analysis were consistent with those of PCA,classifying the seven edible fungi into three clusters: The first cluster consisted of shiitake mushroom; the second cluster included white mushroom,crab-flavor mushroom,and king oyster mushroom,and the third cluster comprised velvet antler mushroom,seafood mushroom,and enoki mushroom.
