中文摘要: 以带鱼鱼糜、大豆分离蛋白和复合胶体为主要原料,利用琼脂的冷却凝胶特性和鱼糜的热促凝胶特性,经过由热到冷的阶段性交替凝胶,辅以均质和斩拌等工艺制得双蛋白果冻。通过测定动态流变、质构特性、白度和感官评分等指标,得到双蛋白果冻的最佳配方为鱼糜蛋白和大豆分离蛋白质量比为2∶3,复合胶体添加量为1.10%(琼脂、魔芋胶和卡拉胶质量比为3∶2∶2)。此配方下得到的双蛋白果冻口感丰富,其中鱼糜蛋白含量为4.30%,大豆分离蛋白含量为6.45%,凝胶性能良好,组织状态细腻,咀嚼性为54.34 g,凝胶强度为69.89 g,硬度为114.87 g,白度为71.57,感官评分为64.80。
Abstract:Hairtail surimi,soybean protein isolate,and composite hydrocolloids including agar were utilized as the main raw materials. By taking advantage of the cooling-induced gelation properties of agar and the heating-induced gelation properties of surimi,a double protein jelly was prepared through alternating hot-to-cold stage gelation processes,complemented by homogenization and chopping techniques. Through measurements of dynamic rheology,texture properties,whiteness,and sensory evaluation indicators,the optimal formulation of the double protein jelly was determined to be a mass ratio of surimi protein to soybean protein isolate of 2∶3,with 1.10% composite hydrocolloid addition (agar,konjac glucomannan,and carrageenan at a mass ratio of 3∶2∶2). The double protein jelly produced with this formulation offered a rich mouthfeel,containing 4.30% surimi protein and 6.45% soybean protein isolate,with excellent gelation properties and delicate texture. The chewiness,gel strength,hardness,whiteness value,and sensory score were 54.34 g,69.89 g,114.87 g,71.57,and 64.80,respectively.
