中文摘要: 为研究植物乳植杆菌发酵衢陈皮的工艺条件及评价酵素液品质,以总黄酮含量为指标,进行响应面设计优化其发酵工艺条件,通过理化指标、抗氧化活性指标及微生物指标评价其品质。结果表明,最佳发酵条件为菌液添加量23 μL/mL、发酵时间42 h、甜菊糖苷添加量16 mg/mL、发酵温度33 ℃。在此优化条件下,衢陈皮酵素总黄酮含量为17.423 μg/mL,pH值、乙醇含量符合QB/T 5323—2018《植物酵素》。衢陈皮酵素液中未检出霉菌及大肠菌群,DPPH自由基清除率为65.82%,超氧化物歧化酶活性为2.55 U/mL。
Abstract:A response surface numerical model was developed to optimize the fermentation conditions of Qu tangerine peel with Lactobacillus plantarum based on total flavonoid content. The quality evaluation of the product encompassed physical and chemical properties,antioxidant activity,and microbial indicators. The findings revealed that the optimal fermentation conditions comprised a bacterial inoculum amount of 23 μL/mL,the fermentation duration of 42 h,a sugar concentration of 16 mg/mL,and a fermentation temperature of 33 ℃. Under these optimized conditions,the total flavonoid content in the fermentation product of Qu tangerine peel reached 17.423 μg/mL. The pH and ethanol content complied with the standards outlined in QB/T 5323—2018 Plant Enzymes. No mold or coliform bacteria were detected in the Qu tangerine peel enzyme solution. The DPPH free radical scavenging rate stood at 65.82%,and the superoxide dismutase activity was measured at 2.55 U/mL.
