中文摘要: 气味感知是人类感官系统中最复杂的领域之一。分子化学结构与气味特性之间的关系一直是化学、神经科学和食品科学等多个学科的研究热点。该文系统综述近年来分子结构与气味关系领域的研究进展,包括理论基础、研究方法、关键发现和应用前景。首先介绍嗅觉感知的生物学基础,然后分析分子物理化学特性(如官能团、分子量、立体构型等)与气味特性(如气味质量、强度和阈值)之间的关联机制。随后,对传统试验方法和现代计算预测方法[如定量构效关系(quantitative structure activity relationship,QSAR)模型、机器学习和深度学习]在该领域的应用进行综述。该文还总结不同类别气味分子(如麝香类、果香类、木香类等)的结构-气味关系研究,并讨论当前研究的局限性和未来发展方向。
Abstract:Odor perception is one of the most complex systems within the human sensory system.The relationship between the molecular chemical structure and odor characteristics is always a research hotspot of subjects including chemistry,neuroscience,and food science.This paper systematically reviewed the research progress on molecular structure and odor,such as theoretical basis,research methods,key findings,and application prospect.The biological basis of olfactory perception was first introduced,and then the association mechanism of the molecular physicochemical(e.g.,functional group,molecular weight,and configuration)and odor characteristics(e.g.,odor quality,intensity,and threshold)was analyzed carefully.Moreover,the application of traditional experimental methods and modern computational prediction methods(e.g.,quantitative structure activity relationship(QSAR)model,machine learning,and deep learning)was summarized.The relationship between structure and odor of different kinds of molecules(e.g.,musk,fruity,and woody)was also reviewed,and the limitations of the current research and the future directions were also discussed.
