中文摘要: 杨梅(Myrica rubra Sieb.et Zucc)是中国南方特有的亚热带常绿果树,以酸甜口感、鲜艳色泽和丰富营养而备受青睐。果实富含多酚类、花色苷类和黄酮类化合物,具有显著的抗氧化、抗炎、抗菌和抗癌等生物活性,对促进健康和预防疾病具有重要作用。该文系统总结杨梅果实营养成分和生物活性的研究进展,探讨超声辅助提取技术、微波辅助提取技术和高压辅助提取技术等技术的优势与不足,旨在为杨梅精深加工和功能性食品开发提供理论支持,推动其全产业链的健康发展。未来研究需进一步优化提取技术,深入探索杨梅活性成分的作用机制和临床应用潜力,实现杨梅资源的高值化利用。
Abstract:Bayberry(Myrica rubra Sieb.et Zucc)is a subtropical evergreen fruit tree unique to southern China.Bayberry fruit is highly favored for its sweet and sour taste,bright color,and rich nutrients.Additionally,abundant in polyphenols,anthocyanins,and flavonoids,the fruit possesses significant bioactivities such as antioxidant,anti-inflammatory,antibacterial,and anticancer properties,thus playing an important role in health promotion and disease prevention.This review systematically summarized the latest advancements in the nutritional component and bioactivity research of bayberry fruit and discussed the advantages and limitations of extraction technologies,including ultrasonic-,microwave-,and high-pressure-assisted extraction.This review aimed to provide theoretical support for the deep processing of bayberry fruit and the development of functional foods,thereby promoting the healthy development of the whole industry chain.Future research needs to further optimize extraction techniques and delve into the mechanisms and clinical application potential of bayberry′s active components to achieve the high-value utilization of bayberry resources
