中文摘要: 将银杏果粉与小麦面粉以不同比例混合后制备复配粉,并以复配粉为原料制作面条,探究不同银杏果粉添加量对复配粉理化性质以及面条的质构特性、蒸煮品质、感官品质等的影响,并利用感官评价方法评价银杏面条的感官品质。研究表明,不同银杏果粉添加量的面条在色泽、蒸煮品质、营养成分含量等方面均有差异。当银杏果粉添加量为0%~20%时,复配粉的理化性质随着银杏果粉添加量的增加而发生一系列的变化,水分、淀粉、蛋白质及总糖含量、质构特性、吸水率均随着银杏果粉添加量的增加而降低,膳食纤维、银杏酸、总酚含量随着银杏果粉添加量的增加而增加,面条的感官评分表现出先增加后逐渐下降的趋势。当银杏果粉添加量为12%时,面条的各项指标以及口感风味达到最佳。

Abstract:Ginkgo fruit powder and wheat flour were mixed in different proportions to prepare the compound powder,and the noodles were made with the compound powder as a raw material.The effects of different ginkgo fruit powder amounts on the physicochemical indicators of the compound powder and the texture,cooking quality,and sensory quality of the noodles were explored,and the sensory quality of ginkgo noodles was evaluated by sensory evaluation method.The results showed that the noodles with different amounts of ginkgo fruit powder differed in color,cooking quality,and nutritional content.When the content of ginkgo fruit powder was 0%-20%,the physicochemical indicators of the compound powder changed with the increase of the content of ginkgo fruit powder.The water content,starch,protein,total sugar content,texture characteristics,and water absorption decreased with the increase of ginkgo fruit powder,while the content of dietary fiber,ginkgolic acid,and total phenol increased with the increase of ginkgo fruit powder,and the sensory score of noodles increased first and then gradually decreased.When the content of ginkgo powder was 12%,the indicators and taste of noodles reached their best.
