中文摘要: 该研究基于山羊奶与牛奶的差异化非蛋白标志物——N-乙酰氨基葡萄糖,建立定量检测山羊奶中牛奶掺杂物的液相色谱-串联质谱法。该方法前处理流程简单,单样品总分析时间约25 min,在牛奶掺加量3%~90%范围内呈良好线性关系(Y=36 154X+65 152),相关系数达0.998 5,该方法检出限与定量限分别为0.9%和3.0%(以牛奶掺加量计),同时兼具高准确度(97.9%~101.6%)与高精密度(2.4%~5.2%)。
Abstract:N-Acetylglucosamine has been confirmed as a distinctive non-protein biomarker for goat milk and cow milk.Based on this foundation,this study established a liquid chromatography-tandem mass spectrometry(LC-MS/MS)method for the quantitative detection of cow milk adulterated in goat milk.The pretreatment process of this method was straightforward,with a total analysis time of approximately 25 min per sample.It exhibited a good linear relationship within the cow milk addition range of 3% to 90%(Y=36 154X+65 152),with a correlation coefficient of 0.998 5.The limit of detection(LOD)and limit of quantification(LOQ)of the method were 0.9% and 3.0%,respectively(calculated based on the addition level of cow milk).Additionally,the method demonstrated high accuracy(ranging from 97.9% to 101.6%)and precision(ranging from 2.4%to 5.2%).
