中文摘要: 该文以黄精、枸杞为主要原料,制备黄精枸杞凝胶软糖,以感官评分为评价指标,通过单因素试验和响应面试验优化制备工艺,并考察黄精枸杞多糖的降血糖作用。结果表明,黄精枸杞凝胶软糖最佳配方为赤藓糖醇添加量20%、凝胶添加量5%、胶体复配比8∶2(卡拉胶与魔芋胶质量比)、黄精枸杞多糖添加量4%,此条件下感官评分为58。动物实验结果表明,与模型对照组相比,黄精枸杞多糖低、中剂量组空腹血糖(fasting blood glucose,FBG)水平分别显著下降19.57%、12.81%(P<0.05),各剂量组糖化血清蛋白(glycosylated serum protein,GSP)水平、胰岛素抵抗指数(homeostatic model assessment of insulin resistance,HOMA-IR)和胰岛素水平均明显下降。胰腺组织病理学分析结果表明,黄精枸杞多糖可缓解胰腺组织损伤。
Abstract:Polygonati Rhizoma and Lycii Fructus were used as main materials to prepare Polygonati Rhizoma-Lycii Fructus gummy candy.With sensory score as the indicator,single-factor experiments and response surface methodology were employed to optimize the preparation process.The blood glucose-lowering effects of the prepared gummy candy were then evaluated.The optimal formula for Polygonati Rhizoma-Lycii Fructus gummy candy was determined as follows:20% erythritol,5% gel(carrageenan gum:konjac glucomannan mass ratio=8∶2),and 4% Polygonati Rhizoma-Lycii Fructus polysaccharides.The gummy candy prepared with the optimal formula achieved a sensory score of 58.Animal experiments showed that compared with the model group,the low-and medium-dose Polygonati Rhizoma-Lycii Fructus polysaccharide groups showed fasting blood glucose(FBG)reductions of 19.57%、12.81%,respectively(P<0.05).All dose groups exhibited significant decreases in glycosylated serum protein(GSP),homeostatic model assessment of insulin resistance(HOMAIR),and insulin levels,along with alleviated pancreatic tissue damage.
