中文摘要: 为研制低血糖生成指数(glycemic index,GI)罗汉果姜黄素米糕并评估其对餐后血糖的影响,该文通过单因素和正交试验确定米糕最佳配方,并采用感官评价和体外消化试验结合GI、估计血糖生成指数(estimated glycemic index,eGI)评价其控糖效果。结果表明,优化后的米糕(以100 g米糕为基准)配方为豆渣粉添加量15%、罗汉果粉添加量4%、葛根粉添加量30%、姜黄素添加量0.06%,与白面包相比,碳水化合物水解速率显著降低,体外消化后对α-淀粉酶与α-葡萄糖苷酶的抑制率分别为96.20%和78.95%。该米糕的GI为40.37,eGI为39.07。因此,该米糕有助于延缓糖类分解与吸收,可有效维持餐后血糖稳态。
Abstract:To develop low glycemic index(GI) Siraitia grosvenorii-curcumin rice cake and evaluate its effect on postprandial blood sugar,the best formula of rice cake was determined by single factor and orthogonal test.Additionally,its control effect on blood glucose was evaluated by sensory evaluation and in vitro digestion test combined with GI and estimated glycemic index(eGI).The results showed that the optimized formula(per 100 g of rice cake)was 15% of okara powder,4% of S.grosvenorii powder,30% of kudzu root powder,and 0.06% of curcumin.Compared with white bread,the carbohydrate hydrolysis rate was significantly reduced.After in vitro digestion,the inhibition rates of α-amylase and α-glucosidase were 96.20% and 78.95%,respectively.The GI and eGI of the rice cake were 40.37 and 39.07,respectively.Therefore,the rice cake is helpful to delay sugar decomposition and absorption,thus effectively maintaining the postprandial blood glucose homeostasis.
