金银花苦荞茶加工工艺优化及品质分析

中文摘要: 该研究以苦荞和金银花为主要原料,通过单因素及正交试验,以感官评分和总黄酮含量为评价指标,确定金银花苦荞茶最佳制作工艺:苦荞粉与金银花粉质量比为3∶2,料水比为1∶2.0(g/mL),α-淀粉酶和黄原胶的添加量分别为1.7%和3%,焙烤温度为180 ℃,焙烤时间为12 min。在此条件下所得金银花苦荞茶呈棕黄色,冲泡后有浓郁的香气,入口微苦而有回甘,浸出物含量高且抗氧化活性较好。

Abstract:Tartary buckwheat and honeysuckle were used as the main raw materials to prepare the honeysuckle-Tartary buckwheat tea.The processing technology was optimized by single factor and orthogonal experiments with the sensory score and total flavonoid content as the evaluation indicators.The results showed that the optimal processing conditions were determined as a Tartary buckwheat flour-to-honeysuckle powder ratio of 3∶2,a solid-to-water ratio of 1∶2.0(g/mL),an α-amylase addition amount of 1.7%,a xanthan gum addition amount of 3%,a baking temperature of 180 ℃,and the baking time of 12 min.Under these conditions,the prepared honeysuckle-Tartary buckwheat tea showed a brown-yellow color,a strong aroma after brewing,a little bitter and sweet taste,high extract content,and good antioxidant activity.
