中文摘要: 随着工业化推进,乳酸菌发酵食品的感官和功能发生变化。近年来,小浆果因富含维生素、矿物质和抗氧化物质,成为食品中的重要原料。但小浆果易腐败,并存在口感不佳和营养吸收率低的问题,因此,乳酸菌发酵逐渐成为小浆果加工的重要手段。该文系统总结乳酸菌发酵在小浆果加工中的应用现状,特别关注乳酸菌与小浆果协同促进人体健康的代谢机制,分析乳酸菌发酵富集小浆果营养的机制,结合可行性建议与未来发展方向的展望,以期为解决小浆果在加工中的品质提升问题提供科学依据,并为高品质小浆果发酵产品的开发及更广泛应用提供理论依据和实践指导。
Abstract:With the advancement of industrialization,the sensory and functional properties of lactic acid bacteria-fermented foods have undergone changes. In recent years,berries have become important ingredients in food products due to their rich vitamins,minerals,and antioxidant compounds.However,berries are prone to spoilage and suffer from poor texture and low nutrient absorption rates. Fermentation with lactic acid bacteria has gradually emerged as a key processing method for berries. This paper systematically summarized the current applications of fermentation with lactic acid bacteria in berry processing,with a particular emphasis on the metabolic mechanisms through which lactic acid bacteria synergized with berries to promote human health.Then,the mechanisms by which fermentation with lactic acid bacteria enriched the nutrition of berries were analyzed.Finally,the feasible recommendations and future development prospects were proposed,with the aim of providing scientific evidence for improving the quality of berries during processing,and of offering theoretical support and practical guidance for the development and broader application of high-quality fermented berry products.
