中文摘要: 透明质酸钠是透明质酸的钠盐形式,其对人体的结构支撑、保湿润滑、免疫调节、组织修复等多方面生理功能具有一定调节作用。2021年,透明质酸钠在我国正式获批为新食品原料,被广泛应用于食品行业。因此,食品中透明质酸钠的含量检测对食品安全和国民健康具有重要意义。目前,国内外已经有多种分析方法实现了对透明质酸钠的定量检测,主要包括硫酸-咔唑法、高效液相色谱法、离子选择性电极技术、近红外光谱法、藏红T共振瑞利散射光谱法、超高效液相色谱串联质谱法、酶联免疫法等。该文综述近年来食品中透明质酸钠含量的分析检测方法,以及各种分析技术的应用现状、原理、适用范围和各自的优缺点。此外,探讨食品中透明质酸钠含量检测面临的挑战以及未来发展前景,以期为相关研究和应用提供参考。
Abstract:Sodium hyaluronate is the sodium salt form of hyaluronic acid,exerting regulatory effects on multiple physiological functions such as structural support,moisturization and lubrication,immune regulation,and tissue repair of the human body.In 2021,sodium hyaluronate was officially approved as a novel food ingredient in China and has since been widely applied in the food industry.Therefore,determining sodium hyaluronate content in food is of great significance for food safety and public health.At present,a variety of analytical methods have been developed for the quantification of sodium hyaluronate at home and abroad,mainly including the sulfuric acid-carbazole method,high-performance liquid chromatography,ion-selective electrode technology,nearinfrared spectroscopy,safranine T resonance Rayleigh scattering,ultra-high-performance liquid chromatographytandem mass spectrometry,and enzyme-linked immunosorbent assay.This paper reviewed the analytical methods for sodium hyaluronate content in food in recent years,as well as the application status,principles,applicable scopes,advantages,and disadvantages of various analytical technologies. In addition,the challenges and development prospects of quantification of sodium hyaluronate in food were discussed. The review provided a reference for relevant research and applications.
