中文摘要: 为研制麻辣风味核桃仁,以核桃仁为主要原料,辅以辣椒、花椒、茴香、八角、香叶,以感官评分作为考察指标,在单因素试验基础上,通过正交试验优化麻辣风味核桃仁的配方及加工工艺,采用55 ℃和65 ℃条件下的加速破坏性试验预测其保质期。结果表明,麻辣风味核桃仁的最佳配方及工艺条件为以1 000 mL饮用水为基准,辣椒30 g、花椒16 g、香叶2 g、茴香2 g、八角4 g、食盐20 g,控制核桃仁与水的质量比为1∶3,煮制时间30 min,烘烤温度80 ℃,烘烤时间8 h。在此配方及工艺条件下制备的麻辣风味核桃仁鲜香酥脆,具有优异的麻辣风味和独特的口感,理化指标符合相关标准规定,常温下的保质期为315 d。
Abstract:Spicy walnut kernels were developed with walnut kernels as the main raw material and supplemented with chili peppers,Sichuan peppercorns,fennel seeds,star aniseed,bay leaves,and other ingredients.With sensory quality as the evaluation index,the formula and processing technology of spicy walnut kernels were optimized through orthogonal experiments on the basis of single-factor experiments. Accelerated destructive tests at 55 ℃and 65 ℃were conducted to predict their shelf life. The results showed that the optimal formula of spicy walnut kernels was composed of 1 000 mL drinking water,30 g chili peppers,16 g Sichuan peppercorns,2 g bay leaves,2 g fennel seeds,4 g star aniseed,and 20 g edible salt. During the processing,the mass ratio of walnut kernels to water was controlled at 1∶3,with a boiling time of 30 min,and then baking was conducted at 80 ℃for 8 h. The spicy walnut kernels prepared under this formula and processing conditions were fresh,fragrant,and crispy,with an excellent spicy flavor and a unique taste. Their physical and chemical indexes complied with the requirements of relevant standards,and their shelf life at room temperature was 315 days.
