中文摘要: 为提升冷冻薯条的加工效率和煮食效果,采用微波-热风耦合加工方式,考察微波功率、热风温度和热风电机转速对薯条煮食效果影响,同时进一步研究微波加工对薯条微观结构和有害物含量的影响。通过考察薯条加工后的脱水率和煮食效果感官评分,确定先热风后微波的加工工艺。以薯条感官评分为考核指标,基于响应面法优化得到冷冻薯条最佳加工工艺:前期热风温度225 ℃、热风电机转速2 070 r/min、加工时间14 min;后期微波功率1 250 W、加工时间6 min。此工艺条件下,冷冻薯条煮食效果感官评分为25.7,与试验值接近,误差小于5%,表明回归模型对冷冻薯条加工具有良好指导作用。微波-热风耦合加工后薯条表面呈现多孔的微观结构,口感更加酥脆,烯酰胺含量降低。
Abstract:Microwave-thermal air coupling was employed to improve the processing efficiency and cooking effect of frozen French fries. The effects of microwave power,hot air temperature,and hot air motor speed on the cooking effect of French fries were investigated.Furthermore,the effects of microwave processing on the microstructure and harmful substance content of French fries were studied. The processing logic of hot air treatment followed by microwave treatment was determined by examining the dehydration rate of French fries after processing and the sensory score after cooking.With the sensory score of French fries as the evaluation indicator,the response surface methodology was employed to optimize the processing process. The optimized processing process of frozen French fries was as follows:hot air treatment at 225 ℃and 2 070 r/min for 14 min,followed by microwave treatment at 1 250 W for 6 min. Under these conditions,the sensory score of French fries after cooking was 25.7 points,which was close to the experimental value,with the error less than 5%,indicating that the regression model had a good guiding effect on the processing of French fries. After microwave-thermal air coupled processing,the surface of French fries presented a porous microstructure,which made the taste of French fries crisper and reduced the content of acrylamide.
