中文摘要: 为探究空间电场对不同酿造程度酱油贮藏期风味及成分的影响,以发酵完成的一级生酱油(酱油A)、酿造半年的生酱油(酱油B)为对象,分析空间电场对其品质的调控作用。结果表明:未经电场处理的酱油A,贮藏期总酸含量、氨基酸态氮含量、可溶性无盐固形物含量、氯化钠含量、pH值等理化指标波动显著,易降低风味品质并增加腐败风险;经电场处理的酱油B,各项指标变化速率高于对照组,鲜味物质积累加快,酿造进程被促进。电场组的6项理化指标(总酸含量、氨基酸态氮含量等)均优于对照组:10 cm电场组的酱油A/B在30~60 d即达到一级酱油标准(氨基酸态氮≥0.70 g/100 mL),90 d时符合特级标准(氨基酸态氮≥0.80 g/100 mL);而对照组指标增长缓慢,酿造周期较长。综上,空间电场可加速酱油贮藏期鲜味物质的积累与品质提升,缩短酿造周期。

Abstract:To explore the effects of spatial electric field on the flavor and components of soy sauce with different brewing degrees during storage,fermented Grade I raw soy sauce(Soy sauce A)and half-year brewed raw soy sauce(Soy sauce B)were used as the research objects,and the regulatory effects of spatial electric field on their quality were analyzed.The results showed that for Soy sauce A without electric field treatment,the physical and chemical indexes such as total acid content,amino acid nitrogen content,soluble salt-free solids content,sodium chloride content,and pH value fluctuated significantly during storage,which were prone to reduce the flavor quality and increase the risk of spoilage. For Soy sauce B with electric field treatment,the change rate of each index was higher than that of the control group;the accumulation of umami substances was accelerated,and the brewing process was promoted. The six physical and chemical indexes(total acid content,amino acid nitrogen content,etc.)of the electric field treatment group were all superior to those of the control group:Under the 10 cm electric field treatment,Soy sauce A/B reached the Grade I standard(amino acid nitrogen≥0.70 g/100 mL)within 30-60 days and met the Premium Grade standard(amino acid nitrogen≥0.80 g/100 mL)by 90 days.In contrast,the indexes of the control group increased slowly with a longer brewing cycle.In conclusion,the spatial electric field can accelerate the accumulation of umami substances,improve the quality of soy sauce during storage,and shorten the brewing cycle.
