中文摘要: 为进一步研究固态发酵富硒菌粉的开发和应用,对两种生产工艺制备的富硒海鲜菇菌粉中蛋白质、类黄酮、有机硒等活性成分及抗氧化活性进行对比分析。结果表明,固态发酵富硒菌粉与富硒海鲜菇子实体菌粉相比,可溶性蛋白、游离氨基酸总量、粗脂肪、类黄酮、有机硒和多糖等活性物质含量均极显著增高。在一定浓度下,固态发酵富硒菌粉的超氧阴离子自由基清除能力和总还原力均高于富硒海鲜菇子实体菌粉,DPPH自由基的清除率差异不大,仅羟基自由基清除率低于富硒海鲜菇子实体菌粉。结合固态发酵富硒菌粉具有更短的培养周期和更少的成本投入,因此固态发酵更适合作为富硒海鲜菇菌粉生产的主要方式。
Abstract:To further elucidate the development and applications of selenium-enriched Hypsizygus marmoreus powder produced via solid-state fermentation,a comparative analysis was performed on the active components,including protein,flavonoids,and organic selenium,as well as the antioxidant activities of selenium-enriched powders prepared by two distinct processes. The results revealed that the solid-state fermented powder contained significantly elevated levels of soluble protein,total free amino acids,crude fat,flavonoids,organic selenium,and polysaccharides,compared to selenium-enriched fruiting body powder. At a specific concentration,the solid-state fermented powder also exhibited stronger superoxide anion scavenging ability and total reducing power. The DPPH free radical scavenging rates were comparable between the two powders,whereas the solidstate fermented powder was only lower in the hydroxyl radical scavenging ability.Considering the shorter cultivation cycle and reduced production costs,solid-state fermentation was more suitable as the primary strategy for the production of selenium-enriched Hypsizygus marmoreus powders.
