中文摘要: 为获得发酵性能优良的菌株,生产优质的发酵芥菜,该文以小叶芥菜(Brassica juncea var.foliosa Bailey)为发酵原料,以4株供试菌株[植物乳植杆菌(Lactobacillus plantarum)LP.3、那慕尔乳杆菌(Levilactobacillus namurensis)LN.1、毕赤酵母属(Pichia)P.4和消化伴生乳杆菌(Companilactobacillus alimentarius)CA.2]为发酵菌株,采用外源添加直投式(directed vat set,DVS)发酵技术发酵芥菜,对比45 d发酵终点时发酵小叶芥菜的感官品质及有机酸含量。结果表明,LP.3菌株在小叶芥菜发酵产生物源苹果酸含量最高,为3.77 g/kg,感官风味剖面分析综合评分最高,为4.85,菜心和叶肉色泽均匀呈金黄色,酸味柔和且层次丰富,无菌醭味,坛香气浓郁,酸香气突出,感官评价最佳。综上,植物乳植杆菌LP.3为优良菌株,将其应用于600 kg小叶芥菜的发酵,结果发现LP.3组乳酸菌活菌数相较于对照组增加2.42 lg(CFU/g)。对酵母菌的繁殖抑制作用明显,酵母菌活菌数减少2.85 lg(CFU/g)。
Abstract:To obtain strains with excellent fermentation performance and produce high-quality fermented mustard,this study used small-leaf mustard(Brassica juncea var.foliosa Bailey)as the fermentation raw material.Four test strains were employed as the fermentation starters:Lactobacillus plantarum LP.3,Levilactobacillus namurensis LN.1,Pichia P.4,and Companilactobacillus alimentarius CA.2.The directed vat set(DVS)fermentation technology with exogenous addition was adopted for mustard fermentation,and the sensory quality and organic acid content of fermented small-leaf mustard were compared at the 45-day fermentation endpoint.The results showed that the LP.3 strain produced the highest content of biogenic malic acid(3.77 g/kg)during small-leaf mustard fermentation and achieved the highest comprehensive score(4.85)in sensory flavor profile analysis.The fermented mustard exhibited uniform golden yellow color in both the core and leaf flesh,with a mild and layered sour taste,no sterile pellicle odor,a strong jar aroma,and a prominent sour fragrance,showing the best sensory evaluation.In conclusion,L.plantarum LP.3 is an excellent strain.When applied to the fermentation of 600 kg small-leaf mustard,the viable count of lactic acid bacteria in the LP.3 group increased by 2.42 lg(CFU/g)compared to the control group.Additionally,it showed a significant inhibitory effect on the reproduction of yeasts,with the viable count of yeasts decreasing by 2.85 lg(CFU/g).
