中文摘要: 以从母乳/婴儿粪便中分离的双歧杆菌和乳杆菌为研究对象,通过牛津杯法筛选能够抑制食源性典型耐药菌株(耐药肺炎克雷伯氏菌、耐药金黄色葡萄球菌、耐药蜡样芽孢杆菌及耐药单增李斯特菌)的功能性益生菌,并验证其在食品基质中的抗菌活性。结果显示,共筛选出20株对目标耐药菌具有显著抗菌活性的功能益生菌。其中,在预制香肠制品中,4株抗菌活性显著的代表性功能益生菌(长双歧杆菌FB1-1、FB1-4;鼠李糖乳杆菌FL1-4、FL1-11)对4株目标耐药菌的消除率在共同培养的6 h内可持续稳定在90%以上。
Abstract:This study investigated bifidobacteria and lactobacilli isolated from human breast milk and infant feces as potential functional probiotics with inhibitory effects against foodborne drug-resistant bacteria,including resistant strains of Klebsiella pneumoniae,Staphylococcus aureus,Bacillus cereus,and Listeria monocytogenes.Using the Oxford cup method,we screened these isolates for antibacterial activity and further validated their efficacy in food substrates.The results showed that a total of 20 probiotic strains showing significant antibacterial activity against the target drug-resistant bacteria were obtained.Among them,four representative strains(Bifidobacterium longum FB1-1 and FB1-4,and Lactobacillus rhamnosus FL1-4 and FL1-11)demonstrated sustained antibacterial effects in the prefabricated sausage model,maintaining a removal rate exceeding 90% against all four drug-resistant pathogens during 6 hours of co-culture.
