甘孜州31种青稞品质差异分析

中文摘要: 青稞专用品种的筛选是影响青稞加工产品品质的重要因素。为对不同种植区域主栽的青稞品种进行品质差异分析,收集甘孜州地区31种青稞分析其营养组成与糊化特性。结果表明,31种青稞淀粉含量、直链淀粉含量、支链淀粉含量为50.91%~67.73%、6.47%~22.40%和34.12%~58.08%,脂肪含量、蛋白质含量、膳食纤维含量为0.98%~4.18%、6.85%~12.20% 和5.08%~22.20%;多酚含量为160.88~378.73 mg/100 g,而β-葡聚糖含量为3.15%~5.03%;不同青稞品种16种氨基酸与14种无机元素均存在差异;糊化温度为59.35~77.31 ℃。相关性分析结果表明,糊化温度与多酚含量呈现显著负相关(p<0.05);主成分分析结果表明康青11综合得分最高,而聚类分析可将31种青稞分为4类。
Abstract:The selection of specialized highland barley varieties is an important factor affecting processed product quality.To analyze the quality differences of highland barley varieties cultivated in different regions,31 varieties from the Ganzi Prefecture were collected to examine their nutritional composition and pasting characteristics.The results showed that starch content,amylose content,and amylopectin content ranged from 50.91%-67.73%,6.47%-22.40%,and 34.12%-58.08%,respectively;fat,protein,and dietary fiber contents were 0.98%-4.18%,6.85%-12.20%,and 5.08%-22.20%,respectively.Polyphenol content ranged from 160.88-378.73 mg/100 g,while β-glucan content was 3.15%-5.03%.Differences were observed in 16 amino acids and 14 mineral elements among different highland barley varieties;gelatinization temperature ranged from 59.35-77.31℃.Correlation analysis showed a significant negative correlation between gelatinization temperature and polyphenol content(p<0.05).Principal component analysis indicated that Kangqing 11 had the highest comprehensive score,and cluster analysis classified the 31 highland barley varieties into four categories.
