中文摘要: 为优化八角干燥加工技术,实现高品质与低功耗目标、提高干燥八角的经济价值,该文采用先微波后热泵的微波热泵耦合干燥方法,分析微波功率、热泵干燥温度和热泵风速变化对八角干燥品质的影响。结果表明,基于单因素试验、响应面优化,得到八角微波热泵耦合干燥的最佳干燥工艺参数为微波功率415 W、热泵干燥温度60 ℃、热泵风速2.6 m/s,此条件下八角干果的复水比为2.17、感官评分为8.1、挥发油提取率为8.21%、反式茴香脑含量为83.68 mg/g、综合评分为0.96。因此,先微波后热泵相结合的干燥方法对八角干燥具有较好的适用性。
Abstract:To optimize the star anise drying process,achieve the goals of high quality and low energy consumption,and improve the economic value of dried star anise,this study adopted a microwave-heat pump coupled drying method where microwave drying was applied first,followed by heat pump drying.It analyzed the effects of microwave power,heat pump drying temperature,and heat pump air velocity on the drying quality of star anise.Based on single-factor experiments and response surface methodology optimization,the optimal drying process parameters for microwave-heat pump coupled drying of star anise were determined as follows:microwave power of 415 W,heat pump drying temperature of 60 ℃,and heat pump air velocity of 2.6 m/s.Under these conditions,the rehydration ratio of dried star anise was 2.17;the sensory score was 8.1;the volatile oil extraction rate was 8.21%;the trans-anethole content was 83.68 mg/g,and the comprehensive score was 0.96.The results showed that the combined drying method where microwave drying was applied first,followed by heat pump drying,has good applicability for star anise drying.
