中文摘要: 果蔬汁作为天然抗氧化剂来源,其功效成分因原料、品种及加工工艺等因素而异。该研究通过铁离子还原抗氧化能力(ferric reducing antioxidant power,FRAP)法及氧自由基清除能力(oxygen radical absorbance capacity,ORAC)法评价14种功能性果蔬汁(酸樱桃汁、甜菜根汁、石榴汁等)的抗氧化效能,并揭示多酚亚类含量及结构特征对抗氧化活性的贡献规律。结果表明,不同果蔬汁抗氧化活性物质含量及抗氧化能力差异显著,酸樱桃汁凭借多酚及亚类富集,ORAC值[(210 710.06±5 636.69)μmol TE/L]和FRAP值[(185.34±0.60)mmol Fe2+/L]显著高于其他品类,甜菜根汁品类紧随其后;相关性分析结果显示,多酚含量主导抗氧化能力,与ORAC(R=0.995,P<0.001)、FRAP(R=0.966,P<0.001)呈极显著正相关,类黄酮为亚类中的关键增效组分(与ORAC、FRAP相关系数均大于0.96);进一步分析显示,果蔬汁多酚亚类组成占比及结构不同,也会影响其抗氧化能力,ORAC对多酚亚类(黄酮醇类)结构高度敏感,依赖于特定分子构型对氢原子转移的适配性,而FRAP则显示多酚总量浓度依赖效应。该研究证实果蔬汁抗氧化能力由多酚含量及类黄酮主导的结构特性共同决定。
Abstract:Fruit and vegetable juices,as natural sources of antioxidants,exhibit variable efficacy due to differences in their row materials,varieties,and processing techniques.This study evaluated the antioxidant efficacy of 14 functional fruit and vegetable juices(including sour cherry juice,beetroot juice,and pomegranate juice)using the ferric reducing antioxidant power(FRAP)and oxygen radical absorbance capacity(ORAC)assays,and explored the contribution of polyphenol subclass content and structural characteristics to antioxidant activity.The results showed significant differences in the content of antioxidant compounds and antioxidant efficacy among the juices.Sour cherry juice,enriched in polyphenols and their subclasses,exhibited significantly higher ORAC [(210 710.06±5 636.69)μmol TE/L]and FRAP [(185.34±0.60)mmol Fe2+/L]values than other juices,followed closely by beetroot juice.Correlation analysis indicated that total polyphenol content dominated antioxidant capacity,showing highly significant positive correlations with ORAC(R=0.995,P<0.001)and FRAP(R=0.966,P<0.001).Flavonoids were identified as the key enhancing components within subclasses,with correlation coefficients with ORAC and FRAP all greater than 0.96.Further analysis demonstrated that differences in the proportion and structure of polyphenol subclasses in fruit and vegetable juices also affected antioxidant capacity.ORAC was highly sensitive to the structure of polyphenol subclasses(particularly flavonols)and depended on the adaptability of specific molecular configurations for hydrogen atom transfer,whereas FRAP exhibited a concentration-dependent effect on total polyphenol content.These findings confirm that the antioxidant capacity of fruit and vegetable juices is jointly determined by polyphenol content and structural characteristics dominated by flavonoids.
