中文摘要: 该文以壳聚糖、玉米醇溶蛋白和丁香精油为原料,采用自组装法制备壳聚糖基可食用复合膜液,以涂膜液对丁香精油的包埋率作为指标,采用单因素与正交试验优化制备工艺并评估其综合性能。结果表明,最优工艺参数为壳聚糖浓度3 mg/mL、玉米醇溶蛋白浓度6 mg/mL、丁香精油浓度3 mg/mL、交联时间30 min、溶液体系pH4.5。在此条件下,丁香精油包埋率达(48.91±0.49)%,显著提升活性成分的稳定性。制备的复合膜液对大肠杆菌和金黄色葡萄球菌的抑菌效果均优于单一壳聚糖、壳聚糖-玉米醇溶蛋白处理组。机械性能结果表明,复合膜拉伸强度为(12.07±2.73)MPa,断裂伸长率为(5.29±0.22)%,且膜厚均匀,呈稻草黄色半透明状。最优工艺制备的天然复合膜机械性能良好、抑菌性最佳。
Abstract:In this paper,chitosan,zein,and clove essential oil were used as raw materials to prepare chitosanbased edible composite film solution by self-assembly method,and the encapsulation rate of the film-coating solution on clove essential oil was used as an index to optimize the preparation process and evaluate its comprehensive performance by using single-factor and orthogonal tests.The results showed that the optimal process parameters were chitosan concentration of 3 mg/mL,zein concentration of 6 mg/mL,clove essential oil concentration of 3 mg/mL,crosslinking time of 30 min,and pH4.5 of the solution system.Under these optimal conditions,the embedding rate of clove essential oil was up to(48.91±0.49)%,which significantly improved the stability of the active ingredients.The antibacterial effect of the prepared composite film solution on both Escherichia coli and Staphylococcus aureus was better than that of single chitosan and chitosan-zein protein treatment groups.The results of mechanical properties showed that the tensile strength of the composite film was(12.07±2.73)MPa;the elongation at break was(5.29±0.22)%,and the film was uniformly thick,straw yellow,and translucent.The natural composite film prepared by the optimal process had good mechanical properties and the best bacteriostatic properties.
