中文摘要: 该文对蛋白质基可食用膜主要制备方法(流延成膜法、浸涂法、静电纺丝法)以及膜性能评价方法进行系统综述,并重点综述明胶基可食用膜、大豆分离蛋白基可食用膜、玉米醇溶蛋白基可食用膜、乳清蛋白基可食用膜等常见蛋白基膜在不同果蔬保鲜中的应用前景,探讨其在果蔬保鲜中的膜层对气体与水分迁移的调控作用及功能性成分的增效机制,以期为蛋白质基可食用膜的研发方向奠定基础,为拓展其在果蔬采后保鲜领域的应用提供新思路。
Abstract:The main preparation techniques for protein-based edible films,such as solution casting,dipping/coating,and electrospinning,as well as the methods for the evaluation of film properties,were reviewed.The application prospects of common protein-based edible films,such as gelatin-based,soy protein isolate-based,zein-based,and whey protein-based films,in the preservation of fruits and vegetables were introduced.Finally,the regulatory effects of protein-based edible films on gas and moisture migration in fruit and vegetable preservation,as well as the mechanisms by which the films enhanced the efficacy of functional components,were discussed.The aim was to lay a foundation for future research directions of protein-based edible films and provide new insights for expanding their applications in the postharvest preservation of fruits and vegetables.
