中文摘要: 为应对水产品贮藏易劣变及传统塑料包装引发的环境污染问题,该研究以脱脂米糠为碳源,采用水热法制备脱脂米糠碳点,并将其作为功能填料掺入明胶-葡聚糖膜构建新型可降解活性包装膜。扫描电子显微镜和红外光谱表明,脱脂米糠碳点与基质聚合物形成氢键,并促使复合膜形成致密的三维网络结构。脱脂米糠碳点的引入增强了复合膜的紫外线阻隔、抗氧化和抗菌性能,改善了水蒸气阻隔能力与机械强度。添加3%脱脂米糠碳点时,复合膜水蒸气透过率降低33.54%,拉伸强度提升0.8倍,对大肠杆菌和金黄色葡萄球菌抑菌率分别达(62.79±3.51)%和(83.20±2.81)%,DPPH自由基和ABTS+自由基清除率分别达67.30%和89.50%。将负载3%脱脂米糠碳点的复合膜用于扇贝贝柱冷藏保鲜试验,结果表明该复合膜能抑制扇贝贮藏中pH值、硫代巴比妥酸值、挥发性盐基氮及菌落总数的上升,延缓感官品质下降,将冷藏货架期从3 d延至9 d。
Abstract:To address the rapid degradation of aquatic products like scallops during storage and environmental pollution from traditional plastic packaging,this study prepared defatted rice bran carbon dots by the hydrothermal method,with defatted rice bran as the carbon source.Then,these carbon dots were applied as functional fillers into a gelatin-dextran film to construct a novel degradable active packaging film.According to scanning electron microscopy and infrared spectroscopy,the defatted rice bran carbon dots formed hydrogen bonds with the matrix polymer,contributing to the dense 3D network structure of the film.After adding defatted rice bran carbon dots,the film gained enhanced ultraviolet(UV)barrier,antioxidant,and antibacterial properties,water vapor barrier capacity,and mechanical strength.When 3% defatted rice bran carbon dots were added,the film's water vapor permeability was decreased by 33.54% while tensile strength was increased by 0.8 times.Antibacterial rates against Escherichia coli and Staphylococcus aureus were(62.79±3.51)% and(83.20±2.81)%,respectively,while DPPH and ABTS+ free radical scavenging rates were 67.30% and 89.50%,respectively.In a cold storage experiment for scallop adductor muscles,the film with 3% defatted rice bran carbon dots could inhibit increases in pH,thiobarbituric acid(TBA)value,total volatile basic nitrogen(TVB-N),and total colony count during storage and delay sensory quality deterioration,extending the shelf life from 3 days to 9 days.
