中文摘要: 该研究采用粳米淀粉、大米粉、糯米淀粉分别替代玉米淀粉加入到低水分挤压植物蛋白肉(low-moisture extrusion plant protein meat,LMPM)中,分析3种替代粉添加百分含量为6%、8%、10%、12%、14%时LMPM的膨化度、密度、复水率、质构等特性。研究表明,向LMPM中添加糯米淀粉达8%时,LMPM的膨化度最佳,高于其他组平均值3.2%。大米粉制备的LMPM,其复水率整体优于其他组,其中百分含量为14%时LMPM的复水率最高,为85%。大米粉以及糯米淀粉两组的持水性及持油性整体水平较高,优于粳米淀粉,其中大米粉的持水性、持油性最高可分别达1.94 g/g和0.67 g/g。糯米淀粉百分含量为8%时,LMPM的感官评分最高,高于对照组15.1%。大米粉百分含量为8%时,LMPM的感官评分高于对照组6.7%。综上,采用百分含量为8%的糯米淀粉作为配方时LMPM的整体接受度较好。

Abstract:In this study,japonica rice starch,rice flour,and glutinous rice starch were individually employed to replace corn starch and incorporated into low-moisture extruded plant protein meat(LMPM).The swelling degree,density,rehydration rate,texture,and other characteristics of LMPM were analyzed under varying addition percentages of these three substitute powders,specifically at 6%,8%,10%,12%,and 14%.It was found that when 8% glutinous rice starch was added to LMPM,the swelling degree reached its optimal level,surpassing the average of other groups by 3.2%.The rehydration rate of LMPM prepared with rice flour generally outperformed that of other groups.Notably,at a 14% addition percentage,the rehydration rate of LMPM peaked at 85%.The water and oil retention levels of the rice flour and glutinous rice starch groups were relatively high overall,exceeding those of the japonica rice starch group.Specifically,the water and oil retention values of rice flour could reach up to 1.94 g/g and 0.67 g/g,respectively.In terms of sensory evaluation,when the addition percentage of glutinous rice starch was 8%,the sensory score of LMPM was the highest,marking a 15.1% increase compared to the control group.Similarly,when the addition percentage of rice flour was 8%,the sensory score of LMPM was 6.7% higher than that of the control group.In conclusion,when using glutinous rice starch at an addition percentage of 8% as the formulation,the overall acceptance of LMPM is relatively favorable.
