中文摘要: 以萌发藜麦为原料,将其进行乳酸发酵,通过单因素及响应面试验得到萌发藜麦饮品的最佳制备工艺,利用该工艺进行生物发酵3 d的过程中,每0.5 d进行取样,测定其中的蛋白质、脂肪、总糖、还原糖、总酚、黄酮、皂苷、γ-氨基丁酸、总酸、维生素C的含量和pH值,探究各物质的变化。结果表明:制备最佳工艺条件为白砂糖添加量19%、菌种添加量0.14%、发酵温度30 ℃、发酵时间3 d,发酵过程中脂肪、总糖、皂苷含量持续下降;总酸含量保持上升;其他成分均有不同程度的波动。

Abstract:This study utilized germinated quinoa as the raw material for lactic fermentation.The optimal preparation process for preparing germinated quinoa beverages was obtained through single-factor experiments and response surface methodology.During the biological fermentation process under these conditions for 3 d,the samples were collected every 0.5 d to determine the content of proteins,fats,total sugar,reducing sugar,total phenols,flavonoids,saponins,γ-aminobutyric acid,total acid,vitamin C,and pH,thereby exploring the dynamic changes in these substances.The results showed that the optimal process conditions were as follows:white sugar addition of 19%,inoculum size of 0.14%,fermentation temperature at 30 ℃,and fermentation duration of 3 days.During the fermentation period,the content of fats,total sugar,and saponins continuously decreased,while total acid content progressively increased.All other components fluctuated to varying degrees.
