中文摘要: 花青素是花瓣和果实的主要呈色物质,具有多种生物活性和健康效益。该文以木香薷紫色花瓣为材料,采用单因素试验和正交试验设计优化超声波辅助提取木香薷花瓣花青素的工艺,并对其稳定性和抗氧化活性进行评价。结果表明,木香薷花瓣花青素的最优提取工艺为料液比1∶15 (g/mL)、酸性乙醇体积分数70%、超声功率100 W、超声时间30 min,在此条件下,花青素得率可达5.09 mg/g。高温(>70 ℃)、Cu2+和Fe2+均会导致木香薷花瓣花青素降解。体外抗氧化活性检测结果表明,木香薷花瓣花青素提取液与同等浓度的VC具有相当的羟基自由基清除能力,但是其总抗氧化能力极显著高于VC。
Abstract:Anthocyanins are the main color substances of petals and fruits,with a variety of biological activities and health benefits.The purple petals of Elsholtzia stauntonii were used as experimental materials for the extraction of anthocyanin by the ultrasound-assisted method.The extraction conditions were optimized by single factor test and orthogonal test,and the stability and antioxidant activity of the extracted anthocyanin were evaluated.The results showed that the optimum extraction conditions were as follows:a solid-liquid ratio of 1∶15 (g/mL),an acidulous ethanol concentration of 70%,ultrasonic power of 100 W,and ultrasonic time of 30 min.Under these conditions,the yield of anthocyanin was as high as 5.09 mg/g.High temperatures (>70 ℃) and addition of Cu2+ and Fe2+ led to the degradation of anthocyanin.The antioxidant activity test in vitro showed that the anthocyanin extract of E.stauntonii petals had the same ability to scavenge hydroxyl free radicals as the same concentration of VC,while its total antioxidant capacity was significantly higher than that of VC.
