中文摘要: 比较分析传统取汁法和改进取汁法的牛瘪汁营养成分和药效成分,并探究牛瘪汁对α-葡萄糖苷酶的抑制活性。改进取汁法采用18 000 r/min的台式高速研磨机研磨牛瘪草料成浆,过滤取汁,改进取汁法的维生素、蛋白质、总氨基酸的含量均高出传统取汁法,其含量分别为163 μg/mL、570 mg/100 g、270.127 μg/mL;其药效成分含量也有所提高,木糖含量为8.40 μg/mL,皂苷含量高达238.21 mg/g,功能性黄酮种类达12种,其中槲皮素、黄芩素、木犀草素C,C-二戊糖含量分别达13.624、18.427、16.293 mg/g,其中槲皮素、黄芩素等具有降血糖的功效。两种取汁法的牛瘪汁液对α-葡萄糖苷酶活性均具有较好的抑制作用,牛瘪汁液的浓度与其α-葡萄糖苷酶抑制活性成正比。改进取汁法的牛瘪汁原液初始浓度抑制率高达82%,对α-葡萄糖苷酶的半数抑制浓度为0.29 mg GAE/mL,降血糖效果明显。
Abstract:A comparative analysis was conducted on the nutritional and medicinal components of buffalo tripe juice obtained through traditional and improved extraction methods,along with an investigation into its inhibitory activity against α-glucosidase.The improved extraction method employed a high-speed rotary pulverizer operating at 18 000 r/min to grind the grass in the tripe into pulp,followed by filtration and juice extraction.The contents of vitamins,proteins,and total amino acids in the juice obtained using the improved method were all higher than those in the traditional method,measuring 163 μg/mL,570 mg/100 g,and 270.127 μg/mL,respectively.The contents of the medicinal components were also enhanced.Specifically,the xylose content was 8.40 μg/mL,the saponin content was as high as 238.21 mg/g,and 12 types of functional flavonoids were identified.Among them,the contents of quercetin,baicalein,and luteolin C,C-dipentoside reached 13.624,18.427,and 16.293 mg/g,respectively.Notably,quercetin,baicalein,and other components exhibited blood glucoselowering effects.Both extraction methods produced buffalo tripe juice that exhibited significant inhibitory effects on α-glucosidase activity,with the inhibition rate being proportional to the concentration of the juice.The initial concentration of the crude juice from the improved method achieved an inhibition rate of up to 82%,with an half maximal inhibitory concentration(IC50) value of 0.29 mg GAE/mL against α-glucosidase,demonstrating a pronounced hypoglycemic effect.
