中文摘要: 为开发一种富含虾青素的功能性巴氏杀菌热处理酸乳,该试验制备虾青素脂质体(astaxanthin-milk phospholipid liposomes,AST-MPL),并以生牛乳为原料,添加富含乳脂肪球膜的乳清蛋白粉(milk fat globule membrane whey powder,M-WPI)及虾青素脂质体。通过考察酸乳的感官评价、贮藏期间虾青素保留率、持水力和抗氧化活性分析,确定其最佳制作工艺。结果表明,虾青素浓度为0.60 mg/mL时,虾青素脂质体粒径为(234.80±3.58)nm,多分散指数(polydispersity index,PDI)为0.186,虾青素包封率为(70.73±2.37)%,DPPH自由基清除率为(28.74±0.48)%。虾青素脂质体巴氏杀菌热处理酸乳的最佳制备条件为生牛乳中复配6%(质量分数)M-WPI,接种1.6%复合发酵剂[保加利亚乳杆菌2N31(Lactobacillus bulgaricus 2N31)∶嗜热链球菌GYX-8(Streptococcus thermophilus GYX-8)∶鼠李糖乳杆菌GYX-9(Lactobacillus rhamnosus GYX-9)∶干酪乳杆菌GYX-1(Lactobacillus casei GYX-1)=3∶1∶1∶1,质量比],42 ℃发酵凝乳后,按10%(体积分数)添加AST-MPL,72 ℃巴氏杀菌30 s。酸乳贮藏两周后,酸乳持水力为(62.34±1.10)%,虾青素保留率为(79.45±1.79)%,DPPH自由基清除率为(66.64±0.71)%。
Abstract:An astaxanthin-enriched pasteurized yogurt product was developed.Astaxanthin-milk phospholipid liposomes (AST-MPL) were prepared.Raw milk was supplemented with milk fat globule membrane whey powder (M-WPI) and AST-MPL.With sensory quality,astaxanthin retention rate,water holding capacity (WHC),and antioxidant capacity during storage as indicators,the optimal formulation was determined.The results indicated that AST-MPL prepared with 0.60 mg/mL astaxanthin had a mean diameter of (234.80±3.58) nm,a polydispersity index of 0.186,an encapsulation efficiency of (70.73±2.37)%,and DPPH radical scavenging activity of (28.74±0.48)%.The optimal preparation protocol for the pasteurized yogurt was as follows:raw milk was supplemented with 6% M-WPI,and inoculated with 1.6% of a mixed starter(Lactobacillus bulgaricus 2N31∶Streptococcus thermophilus GYX-8∶Lactobacillus rhamnosus GYX-9∶Lactobacillus casei GYX-1=3∶1∶1∶1,mass ratio).After fermentation at 42 ℃,10%(volume) AST-MPL was gently incorporated,followed by pasteurization at 72 ℃ for 30 s.After two weeks of storage,the yogurt showed a WHC of (62.34±1.10)%,an astaxanthin retention rate of (79.45±1.79)%,and DPPH radical scavenging activity of (66.64±0.71)%.
