中文摘要: 为探究黄花啤酒酿造的最佳工艺条件,以干黄花为辅料,在单因素试验的基础上,通过响应面法优化得到黄花啤酒的最佳酿造工艺参数:以山西大同大学生物工程试验中心的除杂除盐自来水为参考体积,黄花添加量8 g/L、酒花添加量0.40 g/L、发酵温度8 ℃。在此工艺条件下,感官评分为83.0,黄花啤酒原麦汁浓度为(11.80±0.04) °P,双乙酰质量浓度为(0.12±0.02) mg/L,色度为(17.20±0.06) EBC,乙醇体积分数为(3.43±0.01)% vol,总酸体积百分数为(1.42±0.01) mL/100 mL,理化指标和微生物安全指标均符合国家相关标准和要求。

Abstract:To explore the optimal process conditions for brewing daylily beer,the optimal brewing parameters of daylily beer were obtained by response surface method optimization based on single factor experiment:Taking the decontaminated and desalinated tap water from the Bioengineering Experiment Center of Shanxi Datong University as the reference volume,the addition amounts of daylily and hops were 8 g/L and 0.40 g/L,respectively,while the fermentation temperature was maintained at 8 ℃.Under these conditions,the sensory score,original wort concentration,mass concentration of diacetyl,chromaticity,volume fraction of ethanol and volume percentage of total acids were 83.0,(11.80±0.04) °P,(0.12±0.02) mg/L,(17.20±0.06) EBC,(3.43±0.01)% vol,and(1.42±0.01) mL/100 mL,respectively.Both the physicochemical indicators and microbial safety indicators met the relevant national requirements and standards.
