大球盖菇杂粮复合脆片工艺优化及功能评价

中文摘要: 以面团特性、抗氧化能力、消化特性为关键指标,研究不同杂粮添加对大球盖菇杂粮复合脆片品质的影响,以开发出低血糖生成指数(glycemic index,GI)的大球盖菇杂粮复合脆片。优化试验结果表明,最佳配方条件为大球盖菇粉添加量10.40%、绿豆粉添加量5.50%、藜麦粉添加量5.70%、燕麦粉添加量7.50%、白芸豆粉添加量7.50%、大麦粉添加量7.50%、小麦粉添加量48.40%,此时大球盖菇杂粮复合脆片的感官评分为7.92。面团特性结果显示,添加大球盖菇粉和杂粮粉使面团的硬度增加至304.45 g,糊化温度升高至88.25 ℃。大球盖菇杂粮复合脆片的a*值为14.25,硬度为565.35 g,脆度为1.89 mm。电子鼻与营养特性结果显示,添加杂粮粉和大球盖菇粉后显著提高脆片的总酚含量(3.16 mg/g),增强抗氧化活性,增加脆片的挥发性成分,降低脆片的淀粉水解率。
Abstract:With dough properties,antioxidant capacity,and digestive characteristics as key indicators,the effects of different cereal additions on the quality of Stropharia rugosoannulata cereal composite crisps were investigated,and a low-glycemic index(GI) S.rugosoannulata cereal composite crisp product was developed.The optimization results indicated that the optimal addition levels were 10.40% S.rugosoannulata powder,5.50% mung bean powder,5.70% quinoa powder,7.50% oat powder,7.50% white kidney bean powder,7.50%barley powder,and 48.40% wheat flour.The composite crisps produced with this formulation had a sensory score of 7.92.The dough property test results revealed that the incorporation of S.rugosoannulata and cereal powder increased the dough hardness to 304.45 g and elevated the pasting temperature to 88.25 ℃.The S.rugosoannulata cereal composite crisps exhibited an a* value of 14.25,the hardness of 565.35 g,and the crispness of 1.89 mm.The electronic nose and nutritional property test results demonstrated that the addition of cereal powder and S.rugosoannulata powder significantly enhanced the total phenol content (3.16 mg/g) and antioxidant activity,increased the volatile components,and reduced the starch hydrolysis rate of the crisps.
