中文摘要: 为优化乌龙茶饮料的加工工艺,该研究以感官评分与茶多酚含量为考察指标,在单因素和响应面法优化浸提工艺的基础上,进一步探讨糖酸添加量对产品品质的影响。结果表明,乌龙茶饮料的最佳工艺条件为浸提温度89 ℃、浸提时间4.4 min、浸提料液比1∶55(g/mL)、白砂糖添加量4%、柠檬酸添加量0.02%。在此条件下制得的乌龙茶饮料酸甜适宜,口感丰富,茶香突出。
Abstract:In order to optimize the processing technology of oolong tea beverages,the sensory evaluation and tea polyphenol content were used as the evaluation indexes.Following the optimization of the extraction process via single factor and response surface methodology,the effect of sugar and acid addition on product quality was further investigated.The results showed that the optimal process conditions for oolong tea beverage were as follows:extraction temperature of 89 ℃,extraction time of 4.4 min,extraction solid-to-liquid ratio of 1∶55 (g/mL),white sugar addition amount of 4%,and citric acid addition amount of 0.02%.Under these conditions,the oolong tea beverage produced had a suitable sour and sweet taste,rich taste,prominent tea flavor.
