中文摘要: 为解决过多摄入动物脂肪不利于身体健康,直接用水或植物油代替脂肪效果有限且会造成低脂肉糜口感劣化、质构变差的问题,该研究通过添加芹菜膳食纤维改善低脂肉糜制品的品质,将不同浓度(0%、2%、4%、6%)的芹菜膳食纤维结合预乳化葵花籽油添加到肉糜制品后,测定肉糜制品的脂肪含量、乳化稳定性、流变特性、质构、色差和微观结构等指标。结果表明,随着芹菜膳食纤维浓度的增加,肉糜制品的脂肪含量、总汁液损失率、水分损失和油分损失均显著降低(P<0.05);流变特性结果表明,随着膳食纤维浓度增加,混合凝胶的储能模量(G')明显增大;低脂肉糜制品的弹性、硬度和胶黏性有明显提升;添加芹菜膳食纤维后低脂肉糜制品L*值、b*值上升,a*值下降(P<0.05);微观结构图显示加入适量膳食纤维可使肉糜体系之间形成更加致密、均一、稳定的三维网络。综上,芹菜膳食纤维可改善低脂肉糜制品的品质特性。
Abstract:Excessive intake of animal fat is not good for health,and directly replacing fat with water or vegetable oil has limited effect and will cause the taste and texture of low-fat minced meat to deteriorate.To address these issues,the quality of low-fat minced meat products was improved by adding celery dietary fiber(CDF).After adding CDF of different concentrations (0%,2%,4%,and 6%) and pre-emulsified sunflower seed oil to minced meat products,the fat content,emulsification stability,rheology,texture,color,and microstructure of the minced meat products were measured.The results showed that with the increase in CDF content,the fat content,total juice loss rate,water loss,and oil loss of minced meat products were significantly reduced (P<0.05);the rheology showed that with the increase in dietary fiber content,the storage modulus G' of the minced meat increased significantly;the springiness and gumminess of low-fat minced meat products were significantly improved(P<0.05),and the hardness of the system was significantly increased (P<0.05);after adding CDF,the L* value and b* value of low-fat minced meat products increased,while the a* value decreased (P<0.05);the microstructure diagram showed that adding an appropriate amount of dietary fiber could form a more compact,homogeneous,and stable three-dimensional network among the minced meat.Therefore,CDF improved the quality characteristics of low-fat minced meat products.
