不同品种西葫芦营养成分及抗氧化、降血糖活性比较分析

中文摘要: 以3种西葫芦(“碧玉”西葫芦BZ、“金皮香蕉”西葫芦JZ和“墨玉”西葫芦MZ)为研究对象,探究其营养成分、生物活性物质及体外抗氧化和降血糖活性差异。结果显示,3种西葫芦水分含量高(>95%),粗脂肪含量(<0.105 g/100 g FW)和总能量(<70.00 kJ/100 g FW)低,粗蛋白质含量适中(0.833~0.945 g/100 g FW),但含有较丰富的总碳水化合物和维生素C,其中BZ含量最高,达到3.08 g/100 g FW和12.04 mg AA/100 g FW;矿物质元素分析表明,3种西葫芦富含钾、磷和钙元素,且具有较高的钾钠比;氨基酸组成分析表明,3种西葫芦均含有多种氨基酸,且必需氨基酸占总氨基酸的34%以上;脂肪酸分析表明,BZ中含有更丰富的不饱和脂肪酸,占其脂肪酸总量的76.84%;BZ中总酚和总黄酮含量显著高于其他两个品种,并从BZ中共分离鉴定出11种酚类化合物,MZ西葫芦中共7种,JZ西葫芦中共5种,其中,BZ中的槲皮素-3,4'-二甲醚-7-O-芸香糖苷首次在西葫芦中鉴定发现。体外活性研究表明,BZ提取物具有更好的抗氧化和淀粉消化酶抑制活性。综上,西葫芦是一种营养丰富的低脂低能量蔬菜,但不同品种西葫芦的营养成分组成、含量和活性存在显著差异。
Abstract:Using three types of zucchinis('Biyu' Zucchini,BZ;'Jinpi banana' Zucchini,JZ and 'Moyu' Zucchini,MZ),this study investigated the differences in their nutrient composition,bioactive substances,and in vitro antioxidant and hypoglycemic activities.The results showed that all three zucchini varieties had high water content(>95%),low crude fat content(<0.105 g/100 g FW) and total energy(<70.00 kJ/100 g FW),with moderate crude protein content (0.833-0.945 g/100 g FW).However,they contained relatively high levels of total carbohydrate and vitamin C,with BZ exhibiting the highest contents at 3.08 g/100 g FW and 12.04 mg AA/100 g FW.Mineral element analysis showed that all three varieties were rich in potassium,phosphorus and calcium,with a relatively high potassium-to-sodium ratio.Amino acid composition analysis showed that all three varieties contained multiple amino acids,with essential amino acids accounting for more than 34% of the total.Fatty acid analysis showed that the BZ had a higher proportion of unsaturated fatty acids (76.84% of total fatty acids).The contents of total phenols and total flavonoids in BZ were significantly higher than those in the other two varieties.A total of 11 phenolic compounds were isolated and identified from BZ,7 in MZ,and 5 in JZ.Specifically,quercetin-3,4'-dimethyl ether-7-O-rutinoside in BZ was identified for the first time in zucchini.In vitro activity studies showed that the BZ extract had better antioxidant and starch digestive enzyme inhibitory activities.Collectively,zucchini is a nutritious vegetable with low-fat and low-energy.However,there were significant differences in the composition,content,and activity of the components among different zucchini varieties.
