中文摘要: 该文探究3种不同热加工方式和4种解冻方式对中华管鞭虾(Solenocera crassicornis)及南美白对虾(Litopenaeus vannamei)中各嘌呤含量的影响。结果显示,在使用沸水煮制时,两种虾的总嘌呤含量随着煮制时间延长而明显降低,两种虾类的整虾组在煮制时间分别为4 min和10 min时,其总嘌呤脱除率最高,同时煮制液的总嘌呤含量明显上升。在使用微波加热处理时,虾仁组的总嘌呤脱除效果明显优于整虾组,两个虾类品种在加热时间分别为4 min和10 min时,总嘌呤脱除效果最好。当pH值为4.0时,中华管鞭虾整虾和虾仁的总嘌呤脱除率最高。超声解冻对中华管鞭虾的总嘌呤脱除率最高,盐水解冻对南美白对虾总嘌呤脱除效果最好,且二者虾仁组整体总嘌呤脱除效果更佳。
Abstract:The effects of three different thermal processing methods and four thawing methods on the purine content in Solenocera crassicornis and Litopenaeus vannamei were investigated.The results showed that when neutral pure water was used for boiling,the total purine content in both shrimp species decreased significantly as the boiling time prolonged.The whole shrimp groups of both species exhibited the highest total purine removal rates after boiling for 4 min and 10 min,respectively,while the total purine content in the boiling liquid increased markedly.During microwave heating,the total purine removal effect was significantly better in the shrimp meat groups than in the whole shrimp groups.The two shrimp species achieved the optimal total purine removal effect after heating for 4 min and 10 min,respectively.At pH4.0,the highest total purine removal rates were observed in both the whole shrimp and shrimp meat of S.crassicornis.Ultrasonic thawing resulted in the highest total purine removal rate for S.crassicornis,while saline thawing was most effective for the purine removal of L.vannamei.Additionally,the shrimp meat groups of both species demonstrated superior overall removal effects.
