中文摘要: 该研究评价杏鲍菇在不同微波功率(1~5 W/g)下干法杀青对多酚氧化酶(polyphenol oxidase,PPO)活性的影响,并以PPO活性作为杀青结束的节点,分别对不同微波功率杀青的杏鲍菇继续进行热风干燥。结果表明,微波干法杀青显著缩短了干燥时间,多糖含量和抗氧化能力分别最大提升了61%和37%。同时建立4种典型的干燥动力学模型,对微波干法杀青后的杏鲍菇热风干燥过程进行预测,发现Henderson模型和Logarithmic模型拟合效果更佳。最后通过观察扫描电子显微镜(scanning electron microscope,SEM)和石蜡切片,揭示了细胞结构塌陷是影响杏鲍菇水分迁移的主要原因。
Abstract:The effect of dry blanching with microwave at the power levels of 1-5 W/g on the polyphenol oxidase(PPO) activity of Pleurotus eryngii was evaluated.PPO activity was used as the endpoint for blanching pretreatment,and the mushrooms treated with microwave at different power levels were subsequently dried by hot air.The results showed that microwave blanching significantly shortened the drying time,while increasing the polysaccharide content and antioxidant capacity by up to 61% and 37%,respectively.Additionally,four typical drying kinetic models were established to predict the hot air drying process of P.eryngii after microwave blanching pretreatment.It was found that the Henderson model and the Logarithmic model demonstrated better fitting performance.Finally,observations via scanning electron microscope (SEM) and paraffin sections revealed that the collapse of the cellular structure was the main factor affecting moisture migration in P.eryngii.
