青稞蛋白乳液油相体积分数对凉皮回生的影响

中文摘要: 以青稞蛋白质为初始原料制作青稞蛋白质乳液,并以此为原料乳液制备青稞蛋白质乳液凉皮。借助低场核磁共振、X-射线衍射以及傅里叶变换红外光谱等技术研究不同油相体积分数(0%~10%)对青稞蛋白质乳液凉皮回生特性的影响。试验结果表明:在7 d冷藏期内,在0%~10%油体积分数范围内,随油相体积分数的增大,凉皮样品硬度减小、持水力整体增加,样品EL-10硬度增值最小(31.60 N)、持水力较大(60.87%),说明凉皮回生受到有效抑制;乳液凉皮熟化后,EL-10凉皮样品平均粒径最大(84.20 μm)、糊化温度最低(74.93 ℃)、峰值黏度最大(4 519.70 cP),且糊化焓值较大(10.54 J/g),说明其回生难度增加;水分分布、晶体结构以及短程有序性结果进一步证实乳液油相体积分数增加对乳液凉皮回生的抑制作用。因此,青稞蛋白乳液的添加能有效抑制凉皮回生,且在0%~10%油相体积分数范围内,油相体积分数越大抑制效果越显著。

Abstract:Highland barley protein was used as the primary raw material to prepare protein emulsions, which were then utilized as stock emulsions to produce highland barley protein emulsion Liangpi (EL). The effects of different oil-phase volume fractions (0%-10%) on the retrogradation characteristics of highland barley protein EL were investigated using techniques including low-field nuclear magnetic resonance (LF-NMR), X-ray diffraction (XRD), and Fourier transform infrared spectroscopy (FT-IR). The experimental results showed that during the 7-day refrigeration period, as the oil-phase volume fraction increased from 0% to 10%, the hardness decreased while the water holding capacity (WHC) of all EL samples increased. Notably, sample EL-10 exhibited the smallest increase in hardness (31.60 N) while maintaining a relatively high WHC (60.87%), indicating effective inhibition of retrogradation. After the ripening of EL samples, EL-10 had the largest average particle size (84.20 μm), the lowest gelatinization temperature (74.93 ℃), the highest peak viscosity(4 519.70 cP), and a relatively high gelatinization enthalpy value (10.54 J/g), which indicated an increased difficulty in retrogradation. The results of water distribution, crystal structure, and short-range ordering further confirmed that the increase in oil-phase volume fraction of emulsions could inhibit the retrogradation of EL samples. Therefore, the addition of highland barley protein emulsions could effectively inhibit the retrogradation of EL samples, and within the range of 0%-10% oil-phase volume fraction, a higher oil-phase volume fraction indicated a more significant inhibitory effect.
